  1. 1 Large Mango purée
  2. 1/2 cup Chickpeas
  3. Pinch baking soda
  4. 4-5 Garlic cloves
  5. 1/4 cup Extra virgin olive oil
  6. 3 Tbsp Tahini
  7. 1/2 tsp cayenne pepper
  8. 1 Tbsp lime juice
  9. As needed To garnish - pomegranate seeds, some boiled chickpeas, sesame seeds and mint

Steps to make to make Mango Hummus

  1. Soak Chickpeas overnight. In a pressure cooker add Chickpeas, pinch of baking soda and salt and fresh water. Pressure cook on high for 5 whistles. Set aside to cool. Don’t discard the water.
  2. Make Mango purée by adding the peeled mango pieces to the blender. Set aside
  3. In a wok heat olive oil and add peeled garlic cloves and on high heat cook to make garlic infused oil. When garlic becomes light brown in colour, set aside. Take out the garlic and set aside the oil for later use.
  4. Peel the skin from the chickpeas under cold water. Add to the blender and add mango purée, brown garlic, tahini, lime juice, cayenne pepper powder, 2 Tbsp garlic infused oil, salt and run the blender smooth.
  5. To plate add the Mango Hummus. With the back of the spoon make circles on the hummus so that Garlic infused oil can be added. Add some boiled chickpeas, sprinkle some sesame seeds and some pomegranate seeds. Add a mint leaf and enjoy. I enjoyed on my multigrain bread
