  1. 500 gram raw mango pieces
  2. 1/4 cup oil
  3. 1 stick cinnamon
  4. 4 cloves
  5. 6 black peppercorns
  6. 2 dry red chillies
  7. 1/2 teaspoon mustard seeds
  8. 1/2 teaspoon cumin
  9. 1/2 teaspoon fenugreek
  10. 1/2 teaspoon hing/ asafoetida
  11. 1/2 teaspoon turmeric powder
  12. 400 gram jaggery
  13. 1 tbsp red chilli powder
  14. 2 tbsp pickle spice

Steps to make to make Vaghariyu / Sweet n Sour Mango Pickle

  1. First of all wash and peel mangoes. Chop them into medium size pieces.
  2. Heat oil in a pan and add cinnamon, cloves, peppercorns, dry red chillies, and mustard seeds. Let the mustard seeds crackle, add cumin, fenugreek and hing. When cumin seeds are brown, add mango pieces and give it a good stir. Let it cook until mango pieces are half done.
  3. Now add turmeric powder to it and mix it well. Add chopped or grated jaggery to it and mix everything well. Cook it on medium heat stirring occasionally.
  4. Cook the pickle until it reaches one-string consistency. Take little bit of syrup between two finger tips to check if it has reached one-string consistency. Turn off the heat and let the pickle cool down. Now add red chilli powder and pickle spice to the warm pickle to get bright red colour and mix it well. Store it in a clean and sterilized jar and keep it in the refrigerator. It can be stored for a few months in the refrigerator.
  5. You can serve vaghariyu with a meal or even with paratha, thepla, muthiya, handvo etc.
